Wonky Natterings

Stalks, Peels, and Tops: The Parts You’re Probably Binning

If you’ve ever chopped the top off a carrot and tossed it straight in the bin, you’re not alone, but you might be throwing away some of the tastiest, most useful parts of your veg box. Here’s how to stop wasting what’s often perfectly good food.

Why We Bin These Bits

Most of us were never taught that stalks, peels, and tops are edible. Supermarket veg often arrives pre trimmed, so we’ve lost the habit of using the whole vegetable. But with a wonky box, you’ll often get everything still attached, and that’s an opportunity, not extra work.

Tops Worth Keeping

Carrot tops can be blitzed into a pesto with garlic, parmesan, and olive oil. Beetroot leaves cook exactly like chard or spinach, just wilted with garlic. Radish tops are peppery and great stirred into soup or blended into a sauce, while celery leaves can be chopped finely and scattered over salads or stews like an herb.

Peels That Pull Their Weight

Potato peelings are brilliant tossed in oil and salt, then roasted until crisp for homemade crisps. Carrot and parsnip peel can be saved in a freezer bag for stock, and if scrubbed well, there’s often no need to peel them at all. Courgette and cucumber peel is usually unnecessary to remove; leaving it on means extra fibre and less waste.

Stalks and Stems

Broccoli stalks just need the tough outer layer peeled away, then sliced thin for stir fries or grated into slaw. Cauliflower leaves can be roasted alongside the florets, where they crisp up beautifully. Herb stalks, like coriander and parsley, are worth finely chopping and cooking into the base of a sauce or curry for extra flavour.

The Easiest Win: Stock

Keep a bag in the freezer for odds and ends, things like peelings, stalks, onion skins, and the tired bits of celery. Once it’s full, simmer with water for an hour and you’ve got a free stock base for soups, risottos, and stews.

Nothing Wasted, Everything Used

It’s a small shift, but it adds up: less in the bin, more flavour in your cooking, and a veg box that goes even further. Next time you’re prepping dinner, pause before you reach for the compost. There’s probably more there than you think.
